Ingredients
 

  • 1 kg Mutton Chops purchased from ribs section
  • ½ tsp salt
  • 2 tbsp Raw Papaya Paste with skin, for tenderizing
  • 4 tbsp Plain Yogurt drained of excess water
  • ¼ cup Fried Onions crushed with salt
  • 1.5 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1.5 tbsp Red Chili Powder adjust for heat
  • 1 tsp Turmeric Powder
  • 1 tbsp Coriander Powder
  • 1 tbsp Cumin Powder
  • 1 tsp Garam Masala Powder
  • ½ tsp Black Pepper ground, can use white pepper
  • 2 tbsp Lemon Juice freshly squeezed
  • 2 tbsp Mustard Oil or ghee, for added flavor

Instructions
 

First Marination

  • In a mixing bowl, add mutton chops, 1/2 tsp salt, and 2 tbsp papaya paste. Massage the meat thoroughly, ensuring it is evenly coated.
    1 kg Mutton Chops, ½ tsp salt, 2 tbsp Raw Papaya Paste
  • Allow the chops to marinate for 15-20 minutes (preferably 1 hour) for best results.

Spice Paste Preparation

  • In a separate bowl, combine 4 tbsp yogurt, 1/4 cup crushed fried onions, 1.5 tbsp ginger paste, 1 tbsp garlic paste, 1.5 tbsp red chili powder, 1 tsp turmeric, 1 tbsp coriander powder, 1 tbsp cumin powder, 1 tsp garam masala, 1/2 tsp black pepper, 2 tbsp lemon juice, and 2 tbsp mustard oil.
    4 tbsp Plain Yogurt, ¼ cup Fried Onions, 1.5 tbsp ginger paste, 1 tbsp garlic paste, 1.5 tbsp Red Chili Powder, 1 tsp Turmeric Powder, 1 tbsp Coriander Powder, 1 tbsp Cumin Powder, 1 tsp Garam Masala Powder, ½ tsp Black Pepper, 2 tbsp Lemon Juice, 2 tbsp Mustard Oil
  • Mix everything together until you get a smooth paste.

Second Marination

  • Coat the mutton chops evenly with the prepared spice paste, ensuring each chop is fully covered.
  • Cover the bowl and marinate for 2 hours (or overnight for enhanced flavor).

Cooking the Mutton Chops

  • Place a frying pan on medium-high heat and let it warm up. Brush the surface with a bit of mustard oil.
  • Once the pan is hot, add the marinated mutton chops and sear for 2 minutes on high heat until browned.
  • Flip the chops and reduce the heat to medium-low. Cover the pan and let the meat cook for 10 minutes, flipping occasionally to ensure even cooking.

Serve

  • Insert a toothpick to check if the meat is tender. If it easily slides in, the chops are ready.
  • Serve hot with raita, lemon slices, onion rings, and naan or paratha.
