Prepare the Dates:
Soak the dates in warm water for 1 hour until softened.
Once soft, remove the seeds and slice the dates thinly.
Make the Jelly:
Follow the instructions on the jelly packet, mixing the contents with water.
Pour the mixture into bowls, allow it to cool, and then chill in the fridge for 10 minutes until set.
Once set, cut the jelly into small squares.
Cook the Sabudana:
In a saucepan, boil the sabudana in water for 10-12 minutes until they turn translucent.
Strain and rinse with cold water to prevent sticking.
Thicken the Milk:
In a saucepan, bring the milk to a boil and add sugar.
Mix in the milk powder (optional) to thicken the milk. Stir continuously for 10-15 minutes until the milk reduces slightly.
Let the milk cool and refrigerate for 30 minutes.
Assemble the Falooda:
In a large mixing bowl, combine the chilled sabudana, jelly squares, sliced banana, soaked dates, and any additional dry fruits.
Pour the thickened milk into the mixture and stir gently to combine all ingredients.
If needed, add more sabudana or milk to achieve your desired consistency.
Serve:
Pour the falooda into individual glasses or cups, and garnish with extra jelly or dry fruits if desired.
Serve chilled for the best taste.
- Customize the fruits: You can add or substitute with your favorite fruits such as mangoes, strawberries, or canned fruits.
- Thicker falooda: If you prefer a thicker consistency, reduce the milk further or increase the amount of sabudana.
- Make ahead: You can prepare the ingredients ahead of time and assemble them just before serving.
- Jelly flavor variations: Feel free to experiment with different jelly flavors to suit your taste or match the season.
This recipe is designed to be versatile, so you can adjust it based on your preferences or the ingredients you have on hand.
